Jackets hang in parked display cars before the counter quietens for dishes staged on antique Japanese ceramics—some up to two centuries old. Diners point to delicate prawn sashimi, vegetarian chawanmushi, and hitomebore rice layered with bonito, rounded out by guided pours of Japanese sake.
